Ingredients:

  • 4 large T-bone mushrooms
  • 8 slices of bacon
  • 4 medium potatoes, thinly sliced
  • 1 large onion, thinly sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-15 minutes. Season with salt and pepper.
  3. While the onions are cooking, prepare the potatoes by layering half of the sliced potatoes in a greased baking dish. Sprinkle with salt, pepper, and half of the shredded cheese.
  4. Add the caramelized onions on top of the first layer of potatoes, then layer the remaining potato slices. Pour the heavy cream evenly over the top and finish with the remaining cheese.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  6. While the potatoes are baking, prepare the T-bone mushrooms. Wrap each mushroom with two slices of bacon, securing them with toothpicks if necessary.
  7. In a separate skillet, cook the bacon-wrapped mushrooms over medium heat until the bacon is crispy and the mushrooms are tender, about 8-10 minutes.
  8. Once everything is cooked, serve the bacon-wrapped mushrooms on a plate alongside a generous portion of cheesy potato bake. Garnish with fresh herbs.
