Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 lemons (zested and juiced)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 pound fresh green beans (trimmed)
  • 1 tablespoon butter
  • 1 teaspoon red pepper flakes (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
  3. Place chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 30 minutes.
  4. While the chicken is marinating, bring a pot of salted water to a boil. Blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  5. In a skillet, melt butter over medium heat. Add the blanched green beans and sauté for 2-3 minutes. Add minced garlic and red pepper flakes (if using) and cook for another minute. Season with salt and pepper to taste.
  6. Place the marinated chicken thighs in the preheated oven and bake for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  7. Serve the baked chicken thighs with the sautéed garlic green beans on the side.
