Ingredients:

  • 6 small corn or flour tortillas
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup mild salsa
  • 1/2 cup crema
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (optional)
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Add taco seasoning and a splash of water to the meat, stirring until well combined. Cook for an additional 5 minutes.
  4. While the meat is cooking, use a round cutter or a glass to cut the tortillas into smaller rounds. You can also leave them whole if preferred.
  5. Spray a muffin tin with cooking spray. Press each tortilla round into the muffin tin to form a cup.
  6. Fill each tortilla cup with a spoonful of the taco meat mixture.
  7. Top with a small amount of mild salsa and shredded cheese, if using.
  8. Bake in the preheated oven for about 10-12 minutes, until the tortillas are crispy and the cheese is melted.
  9. Remove from the oven and let cool slightly. Top each bite with a dollop of crema and a sprinkle of shredded lettuce before serving.
