Ingredients:

  • 1 cup all-purpose flour
  • 2 ripe bananas, mashed
  • 2 tablespoons brown sugar
  • 1 cup milk (or dairy-free alternative)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon vegetable oil (or melted butter)

Instructions:

  1. In a mixing bowl, combine the flour, brown sugar, baking powder, baking soda, and salt.
  2. In another bowl, mash the ripe bananas and then mix in the milk, vanilla extract, and vegetable oil until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing; a few lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
  5. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface, about 2-3 minutes.
  6. Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
  7. Serve warm with additional sliced bananas, a drizzle of honey or maple syrup, and a sprinkle of brown sugar if desired.
