Ingredients:

  • 1 cup rolled oats
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1/2 cup chocolate protein powder
  • 1/2 cup almond milk (or any milk of choice)
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the rolled oats, chocolate protein powder, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix together the mashed bananas, almond milk, honey or maple syrup, applesauce, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the dark chocolate chips.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
