Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup mixed nuts (walnuts, almonds, pecans), chopped
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup dark chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), milk, and vanilla extract.
  3. In another bowl, mix the rolled oats, chopped nuts, cinnamon, salt, and baking powder.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. Fold in the dark chocolate chips if using.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
