Ingredients:

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Butter or oil for cooking

Instructions:

  1. In a blender, combine the rolled oats and blend until they reach a flour-like consistency.
  2. Add the ripe bananas, milk, eggs, baking powder, vanilla extract, cinnamon, and salt to the blender. Blend until smooth and well combined.
  3. Heat a non-stick skillet over medium heat and add a little butter or oil.
  4. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.
  5. Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.
  7. Serve warm with your choice of toppings such as maple syrup, fresh fruits, or yogurt.
