Ingredients:

  • 1 cup rolled oats
  • 1 ripe banana, mashed
  • 1 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Cooking oil or butter for the skillet

Instructions:

  1. In a blender, combine the rolled oats, mashed banana, milk, egg, baking powder, cinnamon, vanilla extract, and salt. Blend until the mixture is smooth and well combined.
  2. Heat a non-stick skillet over medium heat and add a little oil or butter.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  5. Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
  6. Serve warm with your favorite toppings such as fresh fruit, yogurt, or a drizzle of maple syrup.
