Ingredients:

  • 1 cup sourdough discard
  • 1 ripe banana, mashed
  • 1 large egg
  • 2 tablespoons milk (or dairy-free alternative)
  • 1 tablespoon sugar (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Butter or oil for cooking

Instructions:

  1. In a mixing bowl, combine the sourdough discard and mashed banana, mixing until smooth.
  2. Add the egg, milk, sugar (if using), and vanilla extract to the bowl, and whisk until well combined.
  3. In a separate bowl, mix the baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix; a few lumps are okay.
  5. Heat a skillet over medium heat and add a little butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  7. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  8. Serve warm with your favorite toppings such as maple syrup, sliced bananas, or nuts.
