Ingredients:

  • 4 bone-in pork chops
  • 1 cup homemade BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup diced fresh pineapple
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together garlic powder, onion powder, salt, and pepper. Rub this mixture onto both sides of the pork chops.
  3. Brush the pork chops with olive oil and place them on the grill. Cook for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C).
  4. During the last few minutes of grilling, brush the pork chops generously with BBQ sauce to glaze them.
  5. While the pork chops are cooking, prepare the pineapple salsa. In a bowl, combine diced pineapple, red bell pepper, red onion, cilantro, and lime juice. Toss well to combine.
