Ingredients:

  • 2 cups cooked rice
  • 1 cup leftover pork, shredded
  • 1/4 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1/2 cup pickles, chopped
  • 1 tablespoon vegetable oil
  • 2 green onions, sliced
  • 1 egg, beaten (optional)
  • Salt and pepper to taste

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shredded pork to the skillet and cook for about 2-3 minutes until heated through.
  3. Stir in the cooked rice and mix well, breaking up any clumps.
  4. Add the BBQ sauce and soy sauce, stirring to combine and coat the rice and pork evenly.
  5. If using, push the rice mixture to one side of the skillet and pour the beaten egg into the other side. Scramble the egg until cooked, then mix it into the rice.
