Ingredients:

  • 1 lb ground beef
  • 2 cups leftover mashed potatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup beef broth
  • 1/2 cup frozen mixed vegetables (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in Worcestershire sauce, thyme, salt, and pepper. If using, add frozen mixed vegetables and beef broth. Cook until heated through.
  5. Transfer the beef mixture to a greased baking dish, spreading it evenly.
  6. Top the beef with the leftover mashed potatoes, smoothing them out with a spatula.
  7. Sprinkle shredded cheddar cheese over the mashed potatoes.
