Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) beans (black or kidney), rinsed and drained
  • 1 cup cooked rice
  • 1 cup polenta
  • 4 cups water or broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions:

  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add the diced onions and carrots to the skillet and sauté until softened, about 5 minutes.
  3. Stir in the mixed vegetables, diced tomatoes (with juice), beans, garlic powder, oregano, salt, and pepper. Simmer for 10-15 minutes until the vegetables are tender and the mixture is heated through.
  4. Meanwhile, bring 4 cups of water or broth to a boil in a separate pot. Slowly whisk in the polenta, stirring continuously to prevent lumps. Cook according to package instructions until creamy, about 5-10 minutes.
  5. To serve, spoon a generous portion of the polenta into bowls, topped with the beef and vegetable mixture. Sprinkle with Parmesan cheese if desired.
