Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions:

  1. In a skillet over medium heat, cook the ground beef with the diced onion and minced garlic until the beef is browned and the onion is translucent.
  2. Stir in the cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes to let the spices meld.
  3. In a large bowl, combine the cooked beef mixture, cooked rice, black beans, and half of the shredded cheese.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Place a generous portion of the beef mixture in the center of each tortilla. Top with avocado slices, shredded lettuce, and diced tomatoes.
  6. Roll the burritos tightly, folding in the sides as you go. Place seam-side down on a plate.
  7. In a small bowl, mix the sour cream with lime juice. Drizzle over the burritos.
  8. Sprinkle the remaining cheese on top and garnish with fresh cilantro before serving.
