Ingredients:

  • 2 lbs beef (chuck or brisket), cut into cubes
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2-3 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until they are golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for another 2 minutes until fragrant.
  4. Add the beef cubes to the pot, browning them on all sides.
  5. Sprinkle in the turmeric, cumin, coriander, and salt. Stir well to coat the beef in the spices.
  6. Pour in enough water to cover the beef, bring to a boil, then reduce the heat to low and cover. Simmer for about 1.5 to 2 hours, or until the beef is tender.
  7. Once the beef is tender, stir in the coconut milk and garam masala. Cook for an additional 10-15 minutes to allow the flavors to meld.
  8. Garnish with fresh cilantro before serving.
