Ingredients:

  • 500g beef, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit
  • 2 teaspoons cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 can (400ml) coconut milk
  • 200g fresh spinach, washed and chopped
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and sauté until they crackle.
  2. Add the chopped onions and cook until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Sauté for another 2 minutes until fragrant.
  4. Add the beef cubes and cook until they are browned on all sides.
  5. Sprinkle in the coriander powder, garam masala, and turmeric powder. Mix well to coat the beef.
  6. Pour in the coconut milk, bring to a simmer, and cover the pan. Cook for about 30-40 minutes until the beef is tender.
  7. Add the chopped spinach and cook for an additional 5 minutes until wilted.
  8. Season with salt to taste and garnish with fresh cilantro before serving.
