Ingredients:

  • 1 lb ground beef
  • 1 can creamed corn
  • 1 can pinto beans, drained and rinsed
  • 1 can mixed vegetables, drained
  • 1 can Rotel tomatoes
  • 1 package cornbread mix
  • 1 cup green beans, trimmed
  • 2 cups tater tots
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Stir in the creamed corn, pinto beans, mixed vegetables, Rotel tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Cook for about 5 minutes until heated through.
  4. In a greased 9x13 inch baking dish, spread the beef mixture evenly.
  5. Prepare the cornbread mix according to package instructions and pour it over the beef mixture.
  6. Layer the green beans on top of the cornbread batter.
  7. Finally, arrange the tater tots on top of the green beans.
  8. Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and the tater tots are crispy.
  9. Let it cool for a few minutes before serving.
