Ingredients:

  • 2 medium beets, peeled and diced
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup crumbled goat cheese
  • Fresh thyme sprigs for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced beets and fresh thyme, cooking for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 25-30 minutes, or until the beets are tender.
  5. Using an immersion blender, blend the soup until smooth. If you prefer a chunky texture, blend only half of the soup.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with crumbled goat cheese and fresh thyme sprigs.
