Ingredients:

  • 1 lb beef stew meat, cut into 1-inch cubes
  • 1 cup pearl barley, rinsed
  • 4 cups beef broth
  • 2 cups water
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the carrots and celery, cooking for an additional 5 minutes until softened.
  4. Add the barley, diced tomatoes, beef broth, water, thyme, rosemary, Worcestershire sauce, and bay leaf. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender and the barley is cooked.
  6. Season with salt and pepper to taste. Remove the bay leaf before serving.
  7. Serve hot, garnished with fresh parsley.
