This Bibimbap recipe beautifully marries traditional Korean flavors with a creative twist. Ingredients:

  • 2 cups cooked white rice
  • 1 cup sliced zucchini
  • 1 cup sliced carrots
  • 1 cup spinach, blanched
  • 1 cup bean sprouts
  • 1 cup roasted sweet potatoes, cubed
  • 200g beef, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon sugar
  • 1 teaspoon minced garlic
  • 2 eggs
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions:

  1. Marinate the beef in soy sauce, sesame oil, garlic, and sugar for at least 30 minutes.
  2. In a skillet over medium heat, sauté the zucchini and carrots separately until tender, about 3-4 minutes each. Set aside.
  3. In the same skillet, cook the marinated beef over medium-high heat until browned, about 5-7 minutes.
  4. Fry the eggs sunny-side up in a separate pan.
  5. To assemble, place a serving of rice in a bowl. Arrange the sautéed vegetables, spinach, bean sprouts, roasted sweet potatoes, and cooked beef on top of the rice.
  6. Top with a fried egg, sprinkle with sesame seeds and chopped green onions, and drizzle with gochujang to taste.
  7. Mix well before eating to combine all the flavors.
