Ingredients:

  • 4 egg whites
  • 1 cup whole oats
  • 1 cup organic blueberries
  • 2 tablespoons no sugar added blueberry jam
  • 2 tablespoons organic cane sugar
  • 1/2 cup skim milk
  • 1 teaspoon pure vanilla extract
  • Canola oil spray

Instructions:

  1. Preheat the oven to 350°F (175°C) and lightly spray a soufflé dish with canola oil spray.
  2. In a bowl, combine the whole oats, skim milk, organic blueberries, organic cane sugar, and pure vanilla extract. Stir until well mixed.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the oat mixture into the beaten egg whites until just combined, taking care not to deflate the egg whites.
  5. Pour the mixture into the prepared soufflé dish and smooth the top.
  6. Bake for 25-30 minutes or until the soufflé is puffed and golden on top.
