Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup water
  • 1/2 cup pickled herring, chopped
  • 2 tablespoons pickling liquid from the herring
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a pot, bring 1 cup of water to a boil. Season the water with salt.
  2. Add the chicken breasts to the boiling water and reduce the heat to a simmer. Cook for 15-20 minutes or until the chicken is fully cooked and no longer pink in the center.
  3. While the chicken is cooking, prepare the glaze. In a small bowl, combine the chopped pickled herring, pickling liquid, honey, Dijon mustard, and fresh dill. Mix well until combined.
