Ingredients:

  • 2 lbs beef brisket
  • 1 cup beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 1/2 cup pickled onions

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the brisket with salt, pepper, thyme, and smoked paprika.
  3. Sear the brisket on both sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
  4. In the same pot, add the chopped onion and garlic, sautéing until softened, about 3 minutes.
  5. Return the brisket to the pot, add the beef broth, and cover with a lid.
  6. Transfer the pot to the preheated oven and braise for 3-4 hours, or until the brisket is fork-tender.
  7. Once cooked, remove the brisket from the pot and let rest for 10 minutes before slicing.
  8. Serve slices of brisket topped with grated Parmesan cheese and a generous portion of pickled onions.
