Ingredients:

  • 400g Springbok boney meat
  • 100g mixed vegetables (carrots, peas, and bell peppers)
  • 2 medium potatoes, diced
  • 2 medium tomatoes, chopped
  • 1 large onion, chopped
  • 200ml tomato sauce
  • 2 tablespoons mayonnaise
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions:

  1. In a large pot, heat a little oil over medium heat and sauté the chopped onions until translucent.
  2. Add the diced Springbok meat to the pot and brown on all sides.
  3. Stir in the chopped tomatoes and cook for a few minutes until they soften.
  4. Add the diced potatoes, mixed vegetables, tomato sauce, Worcestershire sauce, salt, and pepper. Stir to combine.
  5. Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the meat is tender and the flavors meld together. Stir occasionally and add water if necessary to prevent sticking.
