Ingredients:

  • 2 large flour tortillas
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 1/4 cup sliced almonds, toasted
  • 1 tbsp honey (optional)
  • 1 tsp vanilla extract
  • 1 tbsp butter or cooking spray for frying

Instructions:

  1. In a bowl, mix the softened cream cheese with honey (if using) and vanilla extract until smooth and creamy.
  2. Spread half of the cream cheese mixture on one tortilla.
  3. Evenly distribute half of the blueberries over the cream cheese layer, then sprinkle half of the toasted sliced almonds on top.
  4. Top with the second tortilla and repeat the process with the remaining ingredients to create a second quesadilla.
  5. In a skillet over medium heat, melt the butter or spray with cooking spray.
  6. Carefully place one quesadilla in the skillet and cook for 3-4 minutes, or until golden brown and crispy. Flip and cook for another 3-4 minutes on the other side.
  7. Repeat with the second quesadilla.
  8. Remove from the skillet, let cool slightly, and cut into wedges. Serve warm.
