Ingredients:

  • 4 cups broccoli florets
  • 4 cups cauliflower florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 slices of bacon, chopped
  • 4 cups vegetable or chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Fresh chives for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  3. Add the broccoli and cauliflower florets to the pot, followed by the broth. Bring to a boil, then reduce the heat and simmer for about 15 minutes or until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches.
  5. Stir in the heavy cream, shredded cheddar cheese, salt, black pepper, and smoked paprika. Heat gently until the cheese is melted and the soup is heated through.
  6. Serve hot, garnished with crispy bacon and fresh chives.
