Ingredients:

  • 2 cups tortilla chips
  • 1 cup cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 1 cup frozen peas, thawed
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add shredded chicken and buffalo sauce, stirring to coat. Cook for about 5 minutes until heated through.
  3. In a large bowl, combine chicken mixture, chicken broth, diced tomatoes, black beans, garbanzo beans, peas, garlic powder, onion powder, salt, and pepper. Mix well.
  4. On a baking sheet, spread out the tortilla chips in an even layer. Spoon the chicken and bean mixture over the chips evenly.
  5. Sprinkle shredded cheese generously over the top.
  6. Bake in the preheated oven for 15-20 minutes, or until cheese is melted and bubbly.
