Ingredients:

  • 1 lb chicken thighs, boneless and skinless, cut into pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 2 cups fresh spinach, chopped
  • 2 tablespoons butter
  • Fresh cilantro, for garnish

Instructions:

  1. In a bowl, marinate the chicken with yogurt, lemon juice, garam masala, turmeric, cumin, coriander, and salt. Let it sit for at least 1 hour or overnight for best results.
