Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup unsalted butter
  • 1 lemon (zested and juiced)
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/4 cup milk

Instructions:

  1. In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.
  2. In a separate saucepan, melt 1/2 cup of butter over low heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add the lemon juice, lemon zest, thyme, and parsley to the garlic butter, stirring to combine.
  4. Season the chicken breasts with salt and pepper. Add them to the saucepan, making sure they are well-coated with the butter mixture. Cover and poach on low heat for about 15 minutes until cooked through.
  5. While the chicken is cooking, mash the drained potatoes with the remaining butter, heavy cream, and milk until smooth and creamy. Season with salt and pepper to taste.
  6. To serve, place a generous scoop of garlic mashed potatoes on each plate, top with the butter-poached chicken, and drizzle with the remaining lemon herb butter from the saucepan.
