Ingredients:

  • 1 medium butternut squash, peeled and diced
  • 1 red bell pepper, diced
  • 1 large onion, chopped
  • 4 sausages (Italian or your choice), sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced sausages and cook until browned, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes.
  4. Add the minced garlic, diced butternut squash, and red bell pepper. Stir to combine.
  5. Sprinkle in the smoked paprika, ground cumin, salt, and pepper. Cook, stirring occasionally, until the squash is tender, about 15-20 minutes.
  6. Return the sausages to the skillet and mix well, cooking for an additional 5 minutes to heat through.
  7. Garnish with chopped parsley before serving.
