Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 6 cups chicken broth
  • 2 cups okra, sliced (fresh or frozen)
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 3 cups cooked white rice
  • Chopped green onions and parsley for garnish

Instructions:

  1. In a large heavy pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour to create a roux, stirring constantly until it turns a dark brown color, about 15-20 minutes.
  2. Add the diced onion, bell pepper, and celery (the 'holy trinity') to the roux, stirring frequently until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced sausage and chicken pieces to the pot, cooking until the chicken is browned on all sides, about 5-7 minutes.
  5. Pour in the chicken broth, and add the okra, Cajun seasoning, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer uncovered for about 45 minutes, stirring occasionally.
  6. Remove the bay leaves and adjust seasoning as needed. Serve the gumbo over cooked white rice and garnish with chopped green onions and parsley.
