Ingredients:

  • 8 oz whole wheat linguine
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup mushrooms, sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 2 teaspoons Cajun seasoning
  • 1/2 cup grated cheese (e.g., Parmesan or mozzarella)
  • Salt and pepper to taste

Instructions:

  1. Cook the whole wheat linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion, celery, bell pepper, and carrot, and sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the sliced mushrooms and continue to cook for another 3-4 minutes until they are tender.
  4. Stir in the grape tomatoes and kalamata olives, cooking for an additional 2-3 minutes until the tomatoes begin to soften.
  5. Sprinkle in the Cajun seasoning, and stir well to combine. Season with salt and pepper to taste.
  6. Add the cooked linguine to the skillet, tossing everything together to ensure the pasta is well-coated with the vegetable mixture and spices.
