Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Instructions:

  1. In a large cast-iron pot or Dutch oven, heat the olive oil over the campfire.
  2. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the pot, breaking it up with a spoon, and cook until browned.
  5. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper, allowing the spices to toast for 1-2 minutes.
  6. Add the diced tomatoes, kidney beans, black beans, beef broth, Worcestershire sauce, and apple cider vinegar.
  7. Bring the chili to a simmer, then cover and let it cook for about 30-40 minutes, stirring occasionally.
