Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the diced mozzarella, halved cherry tomatoes, chopped basil, balsamic glaze, salt, pepper, garlic powder, and Italian seasoning. Mix well.
  3. Using a sharp knife, create a pocket in each chicken breast. Be careful not to cut all the way through.
  4. Stuff each chicken breast with the mozzarella and tomato mixture, securing the openings with toothpicks if necessary.
  5. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  7. Remove from the oven, let it rest for a few minutes, then serve with a drizzle of extra balsamic glaze if desired.
