Ingredients:

  • 4 hoagie rolls
  • 1 cup grated carrots
  • 1/2 cup mayonnaise (or vegan mayo)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
