Ingredients:

  • 4 medium potatoes, peeled and cubed
  • 2 large carrots, peeled and chopped
  • 2 tablespoons butter (or olive oil for a vegan option)
  • 2 cloves garlic, minced
  • 1/4 cup milk (or plant-based milk for a dairy-free version)
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large pot, bring salted water to a boil. Add the potatoes and carrots, and cook until both are tender, about 15-20 minutes.
