Ingredients:

  • 1 cup grated carrots
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 cup marinara sauce (for serving)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated carrots, mozzarella cheese, breadcrumbs, Parmesan cheese, parsley, beaten egg, garlic, onion powder, paprika, salt, pepper, olive oil, oregano, and basil. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 20-25 minutes or until golden brown and firm to the touch.
  5. Serve warm with marinara sauce on the side for dipping.
