Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup Greek yogurt
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup whole wheat breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes until tender. Drain and set aside.
  3. In a large mixing bowl, combine the cooked chicken, chicken broth, Greek yogurt, half of the shredded cheddar cheese, garlic powder, onion powder, dried thyme, salt, and pepper. Mix until well combined.
  4. Fold in the cooked cauliflower gently to avoid breaking the florets.
  5. Transfer the mixture to a greased 9x13 inch baking dish. Spread it out evenly.
  6. In a small bowl, mix the breadcrumbs with the remaining cheddar cheese and olive oil. Sprinkle this mixture evenly over the casserole.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
