Ingredients:

  • 1 head of cauliflower, riced
  • 1 lb ground turkey
  • 1 can (15 oz) crushed tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Start by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, and cut it into florets. Pulse in a food processor until it resembles rice grains. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until the onion is translucent.
  3. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  4. Stir in the crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Simmer for about 10 minutes until the sauce thickens slightly.
  5. In another pan, lightly sauté the cauliflower rice for about 5 minutes until tender but still firm. Season with salt and pepper.
  6. Serve the ground turkey tomato sauce over a bed of cauliflower rice, garnished with fresh basil if desired.
