Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 stalks celery, chopped
  • 2 large carrots, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chopped celery and sliced carrots, and cook for 5-7 minutes until they begin to soften.
  4. Pour in the chicken broth and add the dried thyme, dried parsley, bay leaf, salt, and pepper. Bring to a boil.

  6. Remove the bay leaf and stir in the fresh lemon juice for a bright finish.
  7. Serve hot, garnished with fresh parsley.
