Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 8 ounces kielbasa, sliced
  • 8 ounces portobello mushrooms, sliced
  • 4 cups chicken broth
  • 2 cans (15 ounces each) great northern beans, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and sliced kielbasa, cooking for another 3-4 minutes until the kielbasa is browned.
  3. Add the sliced portobello mushrooms and cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to a simmer.
  5. Add the great northern beans, thyme, salt, and pepper. Simmer for 15-20 minutes to allow the flavors to meld.
  6. Stir in the chopped spinach and cook for another 2-3 minutes until wilted.
  7. Remove from heat and stir in the shredded cheddar cheese until melted and well combined.
  8. Serve hot, garnished with additional cheese if desired.
