Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup cheddar cheese, shredded
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the sliced onions and bell peppers, and sauté until they are soft and slightly caramelized, about 5-7 minutes.
  2. Add the shredded chicken to the skillet along with garlic powder, smoked paprika, salt, and pepper. Stir to combine and heat through for about 3-4 minutes.
  3. Remove the skillet from heat and sprinkle in half of the cheddar cheese, stirring until melted and combined with the chicken mixture.
  4. Warm the flour tortillas in a dry skillet for about 30 seconds on each side, or until pliable.
  5. Spoon the chicken mixture evenly onto each tortilla, then top with the remaining cheddar cheese.
  6. Fold the sides of the tortilla over the filling and roll it up tightly. You can toast the wraps in the skillet for an additional 2-3 minutes on each side to achieve a crispy exterior, if desired.
  7. Slice in half and serve warm, garnished with fresh cilantro or parsley if using.
