Ingredients:

  • 1 pound cheddar jalapeño sausage, sliced
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced cheddar jalapeño sausage and cook until browned, about 5-7 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. In the same skillet, add the onion, red and green bell peppers, and garlic. Sauté until the vegetables are soft, about 5 minutes.
  5. Stir in the corn, smoked paprika, cumin, salt, and pepper. Cook for another 3-4 minutes, allowing the flavors to meld.
  6. Return the sausage to the skillet and mix well. Cook for an additional 2 minutes to heat through.
  7. Remove from heat, garnish with fresh cilantro, and serve with lime wedges.
