Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 3/4 cup warm water
  • 1 tablespoon olive oil
  • 1 cup mixed cheese (mozzarella and cheddar)
  • 1 cup cooked potatoes, mashed
  • 1/2 cup peas
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon chopped cilantro (optional)
  • 1 egg (for egg wash, optional)

Instructions:

  1. In a large bowl, mix flour, salt, sugar, and instant yeast.
  2. Add warm water and olive oil to the dry ingredients, and knead until a smooth dough forms. Let it rise for 1 hour.
  3. In a separate bowl, combine mashed potatoes, peas, curry powder, cumin, turmeric, salt, pepper, and cilantro. Mix well.
  4. Preheat oven to 425°F (220°C).
  5. Divide the dough into 4 equal parts and roll each into a circle on a floured surface.
  6. Place a generous amount of the potato curry mixture on one half of each dough circle, then top with mixed cheese.
  7. Fold the other half of the dough over the filling and seal the edges by crimping with a fork.
  8. If desired, brush the tops with beaten egg for a golden finish.
  9. Bake for 20-25 minutes or until golden brown.
  10. Allow to cool slightly before serving.
