Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound andouille sausage, sliced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 2 cups carrots, sliced
  • 2 cups cabbage, chopped
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese, grated

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant and translucent.
