Ingredients:

  • 4 medium potatoes, peeled and sliced
  • 2 medium apples, cored and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced potatoes and apples.
  3. In another bowl, mix the mayonnaise, garlic powder, onion powder, salt, pepper, and thyme until well combined.
  4. Pour the mayonnaise mixture over the potato and apple slices, tossing to coat evenly.
  5. In a greased baking dish, layer half of the potato-apple mixture. Sprinkle half of the shredded cheese on top.
  6. Layer the remaining potato-apple mixture and top with the remaining cheese. If desired, sprinkle breadcrumbs over the top for extra crunch.
  7. Drizzle the olive oil over the top.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the potatoes are tender.
