Ingredients:

  • 1 lb beef steak, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 large potatoes, peeled and cubed
  • 4 slices of bacon, chopped
  • 1 large onion, thinly sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. 1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with a bit of butter, salt, and pepper. Set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside, leaving the bacon fat in the skillet.
  3. 3. In the same skillet, add the sliced onions and cook until caramelized, about 5-7 minutes. Add the sliced mushrooms and cook until softened, about 3-4 minutes.
  4. 4. Push the onions and mushrooms to the side of the skillet, and add the beef steak pieces to the center. Season with salt and pepper, and cook until browned on all sides, about 5-7 minutes.
  5. 5. Once the beef is cooked, mix in the bacon and combine all ingredients in the skillet. Reduce heat to low.
  6. 6. Spread the mashed potatoes evenly over the beef and mushroom mixture in the skillet, and top with shredded cheese. Cover and cook on low until the cheese is melted and bubbly, about 5-10 minutes.
  7. 7. Garnish with fresh parsley before serving.
