Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 medium onion, diced
  • 2 jalapeños, diced (seeds removed for less heat)
  • 1 can black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 egg, beaten
  • 1/4 cup milk

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add diced onions and jalapeños, and sauté until softened, about 5 minutes.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 7-10 minutes. Drain any excess fat.
  5. Stir in the cooked rice, black beans, garlic powder, cumin, salt, pepper, and half of the shredded cheese. Mix well to combine.
  6. Remove from heat and let the mixture cool slightly before adding the beaten egg and milk. Stir until everything is well incorporated.
  7. Spoon the beef and rice mixture into each bell pepper, packing it down gently. Top with the remaining cheese.
  8. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving. Enjoy your flavorful stuffed peppers!
