Ingredients:

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or a blend)
  • 4 large eggs
  • 1/2 cup milk
  • 6 small tortillas (flour or corn)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add garlic powder, onion powder, chili powder, salt, and pepper to the beef, stirring to combine. Remove from heat.
  4. In a bowl, whisk together the eggs and milk until well combined.
  5. In a greased baking dish, layer 2 tortillas at the bottom. Spread half of the beef mixture over the tortillas and sprinkle with half of the shredded cheese.
  6. Add another layer of 2 tortillas, followed by the remaining beef mixture and cheese.
  7. Top with the last 2 tortillas and pour the egg and milk mixture evenly over the top.
  8. Sprinkle any remaining cheese on top and season with a little salt and pepper.
  9. Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is golden brown.
  10. Remove from the oven and let cool for a few minutes before slicing. Garnish with chopped cilantro if desired.
