Ingredients:

  • 1 pound ground beef
  • 8 ounces elbow macaroni
  • 2 cups Velveeta cheese, cubed
  • 1 cup milk
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (for topping)
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.
  4. Add the ground beef to the skillet, breaking it apart and cooking until browned. Drain excess fat if needed.
  5. Stir in the diced tomatoes, garlic powder, onion powder, paprika, salt, and pepper. Cook for an additional 3-4 minutes.
  6. In a separate pot, combine the Velveeta cheese and milk, heating gently until melted and smooth.
  7. Combine the cooked macaroni with the beef mixture, then pour the melted cheese sauce over the top, stirring until evenly coated.
  8. Transfer the mixture to a greased baking dish. Sprinkle shredded cheddar cheese on top.
